Carrot Cake Energy Balls

One of my favorite things in the spring, when the garden is busy and baseball season has begun… Is an easy pick-me-up snack!

These Carrot Cake Energy Balls are easy and can come together in under 10 min.

Ingredients:

  • 12 dates soaked in hot water

  • 2 cups organic rolled oats

  • 1/4 cup raw blue agave syrup

  • 2 cups shredded carrots

  • 1/2 tbsp cinnamon

  • 1 tsp vanilla extract

  • 1/2 cup mixed nut chopped

  • 1 cup coconut shreds

    Drain dates after softening. Then add to food processor with rolled oats, carrots. Pulse for 1-2 min, then add to bowl.

    Add the remaining ingredients except the coconut shreds. Once together, place the coconut shreds on a plate. Roll carrot cake mix into balls, then roll around the coconut to completely coat. Place in a container and in the refrigerator. Good for 7-12 days ( We don’t normally make it past 3 days)
